Cauliflower Soup

Here is a mediterranean instapot recipe that is low calorie and sure to please! Yum Yum!!

Pureed Cauliflower Soup

This soup is easy to make. Serve the soup with additional greek yogurt on the side for those who want a little extra tangy flavor.

2 tbsp Olive Oil

1 Medium onion, peeled and chopped

1 stalk of celery

1 medium carrot, peeled and chopped

3 sprigs fresh thyme

4 cups cauliflower florets

2 cups vegetable stock

1/2 cup half and half

1/4 cup low fat plain greek yogurt

2 tbsp fresh chives

  1. Press the sautés button on the insta pot and heat the oil. Add the carrots, onion, and celery. Cook until just tender , approx 6 min. Add thyme, cauliflower, and stock. Stir well, then press the cancel button.

  2. Close lid, set steam release to sealing, then press the manual button, and set time to 5 min. When the timer beeps, let the pressure release naturally which may take about 15 min.

  3. Open lid, remove and discard thyme stems, and with an immersion blender, puree soup until smooth. Stir in half and half and yogurt. Garnish with chives and serve immediately.
